Three Cheese Rigatoni







 

With most people being careful with money, this is a tasty, low cost recipe to make.

 

Mix it ahead, involving your children in grating the cheese and measuring the ingredients. Have it ready to pop in the oven after a soccer game or a school event, as it will make for an easy dinner. Add a salad or applesauce and you have a nice, balanced meal.

 

Three Cheese Rigatoni

 

One 16 oz. package rigatoni

4 tablespoons flour

About 1 ½ pounds Sharp Cheddar

4 cups milk

 and Monterary Jack Cheese

Salt and pepper

4 tablespoons butter

Parmesan Cheese for topping

Cook rigatoni according to directions on package or in your favorite manner. Drain. 

 

Make a sauce of butter, flour, seasonings, and milk, stir until thickened. Add the cheese, which has been cut into small pieces or shredded. Cook until melted. Mix with cooked and drained pasta, turn into a buttered casserole. Top with Parmesan cheese. Bake at 350 degrees for 45 minutes.

 

This recipe makes 2 8x8 casseroles or 1 large casserole. It freezes well; make two - eat one and give the other to a friend.
